Viola’s Poetic Blueberry Banana Pancakes

I love these blueberry pancakes which I make for my mother–she loves them, but so does everyone I have ever made these pancakes for. They can be anything you want them to be. Which makes me think of poetry, because poems can be so versatile, so diverse. But these pancakes! Ah, delicious poetry. They can be gluten-free. They can be dairy-free. They can be egg-free. They can be vegan. Or…they can have wheat flour. Milk. Butter. Eggs. They taste amazing either way, and can be as ethical, healthy and guilt-free as you want them to be. I like them with fruit blended in, but they can be fruit-free. Without further ado, here is the recipe (with vegetarian/vegan ingredient options or substitutions in parentheses). This recipe makes about 10-12 pancakes; the recipe can be halved to make a batch of 5-6 pancakes.

Viola’s Poetic Blueberry Banana Pancakes ❤

  • 1 cup whole wheat flour (or gluten-free flour mix)
  • 1 cup organic whole milk (or organic soy/almond milk)
  • 1 egg (or 1 tbsp of ground flax seeds, or 1 tbsp of chia seeds)
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp brown sugar — optional
  • 1 ripe banana
  • 1 cup fresh or frozen blueberries
  • butter/ghee, coconut oil, honey, maple syrup, jam

  1. Beat egg in a large bowl (or mix flax/chia with a little water and beat with a whisk).
  2. Add milk, olive oil, and brown sugar to the bowl, and whisk the mixture until smooth.
  3. In a separate bowl for dry ingredients, mix flour with cinnamon, nutmeg, salt, and baking powder. Mix until homogeneous.
  4. Add dry ingredients to wet ingredients and whisk until smooth.
  5. Peel ripe banana and mash it until smooth. Add mashed banana to the pancake batter and mix until it’s blended in evenly.
  6. Add fresh or frozen blueberries to the batter and stir.
  7. Heat frying pan/skillet or pancake griddle, and grease it with a little butter/ghee or coconut oil.
  8. Fry pancakes on medium heat, for a few minutes on each side, or until golden brown.
  9. Allow pancake to cool on plate and top it with your choice of toppings–butter, honey, maple syrup, or jam.
